Apple, Walnut + Meatball Salad


Ingredients:

Beef Mince 125g
Sesame Seeds 5g (1 tbsp )
Cumin, Ground 1g ( 14 tsp )
Coriander, Ground 1g ( 14 tsp )
Chilli Flakes 1g ( 14 tsp ) optional
Olive Oil 5ml ( 14 tbsp ) for frying
Tomato 12 sliced
Green Apple 12 sliced
Celery 1 stalk chopped
Fresh Mint 14 bunch ( 14 cup ) optional
Olive Oil 10ml ( 12 tbsp ) to drizzle
Lemon Juice 10ml ( 12 tbsp ) to drizzle, optional
Walnuts 10g (1 tbsp ) chopped

Method:

  1. For the meatballs, combine the mince, sesame seeds, and dried spices in a bowl and using your hands, mix well to combine all of the flavours. Roll into balls a little smaller than golf ball size.
  2. Heat your olive oil in a fry-pan over medium to high heat and cook the meatballs for 2-3 minutes each side, turning often to get a lovely golden brown exterior and ensuring to cook through. Remove from the pan and set aside and get started on your salad.
  3. In a bowl, combine your tomato, apple and fresh herbs. Dress well with the extra-virgin olive oil, lemon juice and apple cider vinegar.
  4. Serve your meatballs on top of your salad and sprinkle with the nuts or seeds if using. Season with salt and pepper and enjoy
