Ingredients:
Beef Mince 125gSesame Seeds 5g (1 tbsp )
Cumin, Ground 1g ( 1⁄4 tsp )
Coriander, Ground 1g ( 1⁄4 tsp )
Chilli Flakes 1g ( 1⁄4 tsp ) optional
Olive Oil 5ml ( 1⁄4 tbsp ) for frying
Tomato 1⁄2 sliced
Green Apple 1⁄2 sliced
Celery 1 stalk chopped
Fresh Mint 1⁄4 bunch ( 1⁄4 cup ) optional
Olive Oil 10ml ( 1⁄2 tbsp ) to drizzle
Lemon Juice 10ml ( 1⁄2 tbsp ) to drizzle, optional
Walnuts 10g (1 tbsp ) chopped
Method:
- For the meatballs, combine the mince, sesame seeds, and dried spices in a bowl and using your hands, mix well to combine all of the flavours. Roll into balls a little smaller than golf ball size.
- Heat your olive oil in a fry-pan over medium to high heat and cook the meatballs for 2-3 minutes each side, turning often to get a lovely golden brown exterior and ensuring to cook through. Remove from the pan and set aside and get started on your salad.
- In a bowl, combine your tomato, apple and fresh herbs. Dress well with the extra-virgin olive oil, lemon juice and apple cider vinegar.
- Serve your meatballs on top of your salad and sprinkle with the nuts or seeds if using. Season with salt and pepper and enjoy
