Ingredients:
Beef Mince 125gBrown Onion 1⁄4 finely chopped
Garlic Clove 1 finely chopped
Fresh Chilli 1⁄4 optional, finely chopped
Mushrooms 100g (1 cup ) roughly chopped
Broth / Stock 60ml ( 1⁄4 cup )
Tomatoes, Tinned 1⁄4 tin ( 1⁄2 cup ) whole or crushed
Zucchini 1 (1 cup ) grated or zoodles
Olive Oil 10ml ( 1⁄2 tbsp )
Parsley 1⁄4 bunch ( 1⁄4 cup ) roughly chopped
Method:
- Heat your fry pan over medium to high heat and add a little olive oil. Add your onion, garlic and chilli. Sauté for 2-3 minutes until softened and aromatic. Now add in your beef mince, stirring regularly making sure to brown your mince and incorporate the flavours really well, this should take 2-3 minutes. Add in the mushrooms and stir to combine and cook for 1-2 minutes until softened slightly.
- Now pour in your broth and tinned tomatoes, stirring well to incorporate. Continue to cook for 5-7 minutes until the sauce rings to thicken and the mushrooms cook down.
- Meanwhile, in a bowl combine the zucchini zoodles, extra virgin olive oil and season with salt and cracked pepper. Place into your serving dish for when your sauce is ready.
- Once you're happy with your bolognese sauce, serve on top of your prepared zucchini zoodles and sprinkle with your fresh flat leaf parsley and season again if need be.
