Ingredients:
BASEAlmond Meal 60g ( 1⁄2 cup )
Hemp Flour 60g ( 1⁄2 cup )
Cacao Powder 60g ( 1⁄2 cup )
Nut Butter / Tahini 120g ( 1⁄2 cup ) or tahini
Coconut Oil 50g ( 1⁄4 cup ) melted
MCT Keto Tonic 40ml (2 tbsps ) or coconut oil
Vanilla Bean 2g ( 1⁄2 tsp ) seeds, extract or powder
Lakanto Maple Syrup 60ml ( 1⁄4 cup ) or stevia to taste.
TOP LAYER
Cacao Butter 110g ( 1⁄2 cup )
Cacao Powder 60g ( 1⁄2 cup )
Hemp Seeds 85g ( 1⁄2 cup )
Macadamias 110g ( 1⁄2 cup ) roughly chopped
Cacao Nibs 5g (2 tsps ) optional
Method:
1 Serve = 50-60g.
Please note, you can use regular maple, however this will increase the carbs per serve.
- For the base, mix together the hemp powder, almond meal and half cup raw cacao powder until well combined. Now add the sweetener of choice, coconut oil, MCT oil, vanilla bean and nut butter. Stir well to combine into a thick paste.
- Press this mixture into a cake or brownie tin covered with parchment paper and place in the fridge to firm up. Now get onto the chocolate layer.
- Over low heat, gently melt down your raw cacao butter and once liquid, stir in your remaining raw cacao powder. Stir or whisk to incorporate and remove from the heat. Add your hemp seeds and macadamia nuts and stir well to combine.
- Pour this mixture over your base layer, sprinkle with raw cacao nibs if using and set in the fridge or freezer until firm enough to slice and enjoy.
- Store in an airtight container in the fridge or freezer.
